How many CFMs do you need for your cubic feet?

Many thanks to the gang at Faber Hoods for this very helpful guide on the technical side of kitchen ventilation. True kitchen ventilation (rather than the cheap and usually ineffective method of hanging a vented microwave over your cooking surface) is an idea that's catching on again. All ventilation uses a measure called Cubic Feet per Minute to indicate how effective the blower motor in a ventilation system is at circulating air. Few topics can confuse people as quickly as CFM ratings.

I thought this was interesting, so I stole it shamelessly from the pages of Real Simple magazine's website. I rarely have any use for that magazine or the idea that I need to pay someone to tell me to get rid of all my crap so I can replace it with more crap that costs more money but takes up less space. Why not just get rid of my crap and not replace it with anything?

Despite my numerous dalliances with other appliance brands, Sub-Zero and Wolf will always be my heart's desire when it comes to refrigeration and cooking appliances. They set the standard in the luxury appliance category and whether it's spoken or unspoken, they are who everybody else is competing against.

I went to a dinner party last night at my old friend Keith's. Keith lives in a recently renovated 1930s bungalow in a historic part of Tampa. He did a masterful job with his home. Despite the fact that it's a historic structure, he stayed true to his modern/ eclectic tastes while still honoring the architecture he had to work with. He did everything perfectly. The scale is right, the aesthetics are right and his use of the existing structure is spot on. Bravo Keith.

Who makes what appliances?

It's no real secret that the brand name on an appliance doesn't tell you very much about who the manufacturer was. Just as with every other industry the last 20 years of the appliance world has been marked by a host of mergers and acquisitions. For the most part, who made your appliance doesn't really matter very much, but I think charts like this from Appliance 411 are helpful to have on hand when you're reading Consumer Reports or any other review source.

OK kids, disclosure time. I used to have a brand loyalty to Sub-zero and Wolf that I considered to be set in stone. When discussions turned to the world of professional ranges, that discussion began and ended with Wolf so far as I was concerned. No one else out there had the chops. I'd always thought of Wolf's competitors as Johnny come latelys who were in it for the pose (Viking) or for the cash (everybody else).

Induction cooking just got even easier

Fagor, the Spanish appliance manufacturer, has just rolled out a new, portable induction cook top and it is slick. Fagor has been around since the early '50s and they are the largest manufacturer of induction cook tops in Europe. They have been a growing presence in the US market since the early '90s, and this is a company that's earned its chops.

Thursday's New York Times contains their weekly Home and Garden section. It's always worth the peruse. Always. In that weekly section, there's a recurring column called The Fix, where a Times staffer fields a reader's question. This week's installment of The Fix was written by Arianne Cohen, and she tackled the question, "Why isn't my dishwasher cleaning my dishes?" Ms. Cohen did a great job with the answer and parts of her column were news to me. Adding to my store of appliance knowledge is something I'm always happy to do and I'm going to excerpt some of her more interesting points here.
